Will Totman

Executive Sous Chef 

Starting his career at Pullman Brisbane King George Square and working across venues such as The Sebel Kiama in the Blue Diamond Bar and Bistro, Thredbo Village as Chef de partie and City Tattersals Club, Will joined the team at Novotel Wollongong Northbeach in 2009 working under the tutelage of Martin Wuestner perfecting his craft and refining his skills and knowledge.

He recently commented about the opening of Palisade “It is a great opportunity for the team at Novotel Wollongong to produce good quality food, working with local suppliers and showcasing what the region has to offer”

Will shall be working closely with Culinary Director Matthew Duggan and Restaurant Manager Miguel Villano, opening Palisade Kitchen & Bar in mid-December 2020
